Abstract | This article discusses what's cooking in America's schoolyard gardens. From First Lady Michelle Obama's world-famous Kitchen Garden, to Alice Waters' groundbreaking Edible Schoolyard in Berkeley, California, to a nationally recognized elementary school learning garden in the small Midwestern town of Ashland, Missouri, school children are planting and cooking up everything from arugula to zucchini. Over the past two decades, schoolyard gardens have been sprouting up around the country in an effort to teach children better eating habits by helping them understand where food comes from. School gardens have struck a chord with food-conscious Americans concerned about the spiking growth rate in obesity and juvenile diabetes--highlighted by First Lady Michelle Obama's "Let's Move" initiative announced in March 2010. "Let's Move" is about getting more nutritious food into the nation's schools and giving parents the tools they need to keep their families healthy and fit. (Contains 8 figures and 6 notes.) (ERIC). |
