Abstract	This package is intended for use in home economics classes focusing on nutrition and food preparation and service. The teaching guide is divided into two parts. The first centers on selected first-time facts on nutrition, meal planning, and basic food preparation skills. It includes modules on nutrition, meal management, initial steps in food preparation, baking and frying skills, and microwave cooking. The second part combines basic food preparation skills with food service career awareness. It includes modules on long-term career opportunities in the food service industry; food service responsibilities; career planning; basic food preparation skills (deep frying, pan frying, grilling, salad making, and coffee making); fats and oils used in food service; and food service sanitation and safety. Each part of the guide also contains program objectives, a description of the target audience for which the part has been developed, timing, teaching suggestions, ideas on using values clarification as a technique to develop career awareness, student worksheets, and transparency masters. Food and kitchen safety checklists are also included. (MN)
