Abstract	"Current research on West African food habits emphasizes stability and neglects change. This article focuses on culinary transformation as an example of social change. It investigates modifications in the transfer and the sources of culinary knowledge, change in the symbolic cultural framework of eating, new types of celebration, social mobility, and the construction of prestige. Interviews with a diverse sample of 89 men and women in urban and rural Benin reveal that the desire for culinary innovation and the flexibility required for innovation are rooted in the structure of the transfer of knowledge in childhood and in the specific social organization of West African households."
